Healthy Lunch

Get on track with your diet.
Here is a great Lightening fast recipe to get your day headed in the right direction:
Quinoa Lentils Marinara

Its just that... full of antioxidants, no fat, and high in protein and fiber. Ah, funny how we were given everything right here on earth to sustain life.
Ingredients:
Quinoa- rinse
Lentils- rinse
Marinara leftovers ( I made from scratch: using tomatoes, diced pepper canned mixture from whole foods- 365 label; 3 garlic cloves, cayenne, Italian seasoning, dash of red pepper, cumin)
Boil water with lentils- reduce to medium heat and cook. Remove from stove and put in a container
Same pot add water and quinoa, boil then cook remainder of time 10 min over med hi heat- becareful not to cook water out
Remove and use a slotted spoon to scoop out to keep a lot of water out of container of mixture
Add 2-3 spoons of the marinara
Done have lunch for the week.
I got ready for work while doing this
You have time to cook a nutritious meal
Protein: quinoa and lentils
Carb: lentils are lower in carbs than beans
Fiber: high from the quinoa, lentils
Antioxidants: marinara (tomatoes, chilis)
Fat: none
Healthy rating: 10/10
